We love to bake. We love to bake cookies! Because we love those things, we do our best to make them as tasty as possible. Our cookies are not your average cookies simply because we put thought into every detail of the process, including our Chef!
Long before our “not your average cookies” were developed, Uyen was studying the culinary arts in Paris, France, acquiring the skills and knowledge that would later lead to the creation of Kirshenbaum Baking Co.’s fresh artisan cookies. Throughout her studies, Uyen honed her craft by learning about quality ingredients, baking techniques, balancing flavors, and the importance of temperature control.
It was through her studies and years of working in numerous establishments that she developed the tools to create high-quality, tasty treats, eventually leading to her signature recipes we now use to bake our famous cookies.
Additionally, as a solution to her husband, Jeff’s, dairy intolerance, she created a line of cookies that are both dairy and gluten free so that he could enjoy her cookies as well! Unbeknownst to her, what started simply as a special cookie for Jeff, became a staple on our cookie menu for so many cookie lovers and is one of our top sellers. When it comes to baking our cookies, there are four key elements that we pay exceptional attention to:

The most important thing to remember is that every cookie is different. The recipe, the ingredients, the temperature of your oven and of your ingredients, and the attention to detail in measuring and mixing can affect how your cookies turn out.
While we are used to working with these elements, many people are not. So we’d like to share with you our secret to baking ‘not your average cookie’.
First, we must remind you that baking is a science. Understanding how the ingredients impact the results, and the chemical reaction that will occur based on how the ingredients interact with one another throughout the process is important. You don’t need to be a scientist, you just need to make sure all your ingredients are measured correctly because they all react to each other so adding the right quantity makes a difference.
Our cookies can’t stay on a shelf for weeks like store bought ones, but there’s a reason why. When it comes to the ingredients we use in our bakery, we stay away from artificial flavors, preservatives and basically anything unnatural. Our products are made fresh, baked daily, contain nothing you can’t pronounce and made with the intention to be eaten fresh!
Our ingredients are hand selected and because most cookies are made of just a handful of basic ingredients, we want to make sure those ingredients are the best quality to ensure it results in the best product.
To make ‘not your average cookies’, we must ensure that our ingredients and oven are at the ideal temperatures. It may not seem like an important part of our process, but baking and ingredient temperatures can transform flavor, texture, and freshness.
Baking temperatures determine how evenly-cooked our cookies will be. If the oven is too hot, the cookies will bake on the outside much quicker than the inside, and if it’s too cool they will spread and be flat. The correct temperature will vary depending on what you’re baking, so it’s essential to know how it should be baked to choose the right temperature.
When it comes to ingredient temperatures, the rule of thumb is that they should all be at room temperature. This includes all your ingredients from the refrigerator like butter, eggs and milk. It makes a world of difference when ingredients that are at the same temperature are mixed together. The great thing is all you have to do is take your ingredients out of the refrigerator ahead of time. If you were to forget, we have tricks like setting our whole eggs in a bowl of hot water to help them warm up. Or, you could simply warm your butter in the microwave just to take the cold edge off. These small steps will make a huge difference in your final product.
